Soulinari, a village in Greece, is located near the epicenter of the Koroneiki olive variety, far enough inland to avoid the effects of the Mediterranean salt air. Situated 300m above sea level, Soulinari produces exceptional Koroneiki olives. These olives are hand-harvested using battery powered harvesters, ensuring minimal carbon footprint. They are processed without heat, relying on nature to recycle water and nutrients back into the soil. The olives are Ice Pressed on the same day to maintain near flawless acidity.
